In this Episode, I chat with my buddy Derrick Walker from Smoke-A-Holics Barbecue in Fort Worth Texas. Derrick has been slanging BBQ for many years, he was doing popups before popups were cool! I dropped by during a BBQ Run I did with my dad where we hit 26 spots in about a week back in December of last year. Smoke-A-Holics was definitely one of the highlights of that trip and I was able to chat with Derrick earlier this year. With his Culinary background and homestyle cooking they coined the phrase TexSoul which is Texas Barbecue with a Soul Food twist. BTW, Smoke-A-Holics has already confirmed that they will be at The Heritage Barbecue Invitational, which is an event that will be held in San Juan Capistrano California to celebrate Heritage Barbecue's 2nd Anniversary on August 13th. BTW, That was the best result ever by an international team at the World Championship. BBQ saved his life and this is his inspiring story. We Kick-Off Season 4 with my conversation with Dayne and Ashley Weaver of Dayne's Craft Barbecue. Stories like theirs is why I have a podcast in the first place. Although you might think of struggle and sacrifice when you hear them share their experiences, but that's not really how they felt. Their Strong belief in each other and the hard work and determination that's instilled in them made it feel like oh well it's just another day, we can work extra hours and just get through it. They were made for each other and they were made to cook great Barbecue, believe me, I know! I recorded this show back in December of 2021 and I was able to make it out there with my dad later in the month and my goodness, we were blown away. This is a very special episode for me I get the great honor to Interview welcome back one of my buddies to the Barbecue Scene! Bryan Furman was on top of the Culinary world in 2019, he finished as a semi-finalist for a James Beard Award, he had just been named one of America's Best New Chefs by Food and Wine magazine and Bon Appetit dubbed him as Georgia's New King of BBQ. Just as all the stars seemed to have aligned for Bryan, it happened. During an overnight cook at his main location in the Riverside neighborhood of Atlanta, a fire broke out and in minutes destroyed what he worked so hard to build. It's been just over two years since that fateful night and through his hard work and determination, Bryan is now ready to make his highly anticipated return to the Culinary World. This is just the beginning of the Comeback story for Bryan Furman Barbecue. I hope you enjoy the Show

As we continue through this pandemic there is so much uncertainty with Jobs, Bills and basic necessities. Through this darkness, glimmers of light begin to appear throughout the world with people caring and lending a hand to fellow humans in order to survive.
In this Special episode I chat with my friends Danny and Brenda Castillo of Heritage Barbecue. Together with an All-Star Cast they have started a project to help those in need. We talk about how this project came to be and we catch up on their plans to open a new restaurant, their latest trips to Texas and what they're doing to survive during these harsh times. In this episode I interview my buddy Karl Fallenius of OwlBear Barbecue in Denver Colorado. Karl has an incredible story that includes cutting his teeth at the legendary Franklin Barbecue, slinging barbecue in the CO Underground scene and finally opening a brick and mortar in the heart of Denver. We dive into his menu and he even gives us a recipe that is at the base of all of his proteins. He also gives us a peek into the whole Denver Barbecue Scene and share's tips on where you should go if you're ever in the area. My buddy Scott Dube was actually eating at Owlbear while I was interviewing Karl, you'll get to hear him give us a shout out in the background. I had the great pleasure of visiting Owlbear in November of last year and I was extremely impressed with the incredible food. You need to definitely add this to your list if you have not made it out. My first Episode of the season is an incredible story of High School Kids in Barbeque! I chatted with Ms Sarah Allen at Lubbock-Cooper High School in Lubbock Texas and some of the members of their bbq competition teams! The team is made up of an equal number of male & female students and they all share the responsibilities of preparation & execution. They are cooking on stick burners, some schools even have programs where students are building pits, more to come on that, they are cooking several proteins and making sides as well! Part of their training includes getting a little help from the Pro’s! The end goal is to make it to the state competition and bring home the Championship. This story gives us a glimpse into what’s happening in the HIGH SCHOOL BBQ scene and it’s a feel good story of how the awesome culture is now embracing our youth! For the past 8 weeks I've interviewed some of the best Tex-Mex Barbecue joint's for our #TexMexBBQSeries. This week's episode will conclude our Series and we are definitely ending with a Bang!! In our Final episode of the series I chat with the OG of Tex-Mex BBQ, Miguel Vidal of Valentina's Tex-Mex Barbecue. This is easily one of my favorite interviews since I started the podcast. I'd never heard of a Tex-Mex Barbecue joint until I ran across Valentina's a few years back. The Smell of Mesquite, the fluffy tortillas, the Beans, the fresh Salsa, the smashed avocado with salt, the beautiful brisket, heck everything Valentina's offers reminds me of my upbringing in West Texas. Miguel grew up in San Antonio Texas and worked in the restaurant industry from an early age. He was a talented Soccer Player that aspired to be a professional but a knee injury caused him to trade the Pitch for a Lot filled with Barbecue Pits and Picnic Tables. For our 7th installment of our #Texmexbbqseries , I chat with Esaul Ramos of 2M Barbecue and Catering in San Antonio Texas. From the first time I met Esaul, we hit it off and became good friends. We often text each other on weekends when there is a good UFC fight Card and any time I'm in or around San Antonio you can always find me there. 2M's story is one filled with Grit, Determination and overflowing with passion, walking into the building you can see the results of their blood sweat and tears. They literally put this restaurant together with their own hands, it's not fancy and they don't have a large state of the art pit room with several rigs. For our 6th installment of our #Texmexbbqseries , I chat with Tony Salazar of The Taste of Texas Tex Mex BBQ in Beaumont TX. Tony Tone AKA Pork Skin has been cooking since he was 16 years old and in 2016 he flipped a switch and started an underground BBQ Business. This Welder by Trade is born and raised on the Gulf Coast of Texas and grew up with Cajun and Mexican cultures. Eating Gumbo with Tortillas was a way of life for him and his family and now he's bringing those influences to his dishes. Through a chance encounter he met Michael Fulmer of Houston Barbecue and when it was time to research potential candidates for the Inaugural Tex-Mex Block Party, Fulmer reached out to Tony. Not only did Tony prove that he could run with the big boys of Tex-Mex Barbecue, he was one of the standouts at the event. I have a feeling we will be hearing a lot more from Tony in the near future. For our 5th installment of our #Texmexbbqseries , I chat with Brandon Hurtado of Hurtado Barbecue in Arlington Texas. Brandon is a successful Business Professional that owns a Marketing Agency in Arlington. He's born and raised in the DFW metroplex and his love for food and cooking dates back to his Grandmother and mothers cooking and his dad smoking Briskets as far back as he can remember. Although Barbecue was never in his plan he quickly got sucked in by the bug that catches many folks in the Barbecue world. He never thought it would lead to a business and why would he, he was already living out his marketing dream and getting a good night sleep every night, but the newly discovered passion was pulling him in. His Creative dishes along with a solid lineup of great central Texas Barbecue has really drawn quite a bit of attention to him. With a little help from Local and social media the business has grown enough that he's now a couple of months away from opening a brick and mortar location. For our Fourth installment of our #Texmexbbqseries , I chat with Ray and Genesis Dominguez of Ray's Texas Smoke Barbecue of Houston Texas. Ray's has been slinging Barbecue since 2015 and he's been incorporating dishes from his Mexican Roots into his menu from the start. They were a participant at the inaugural Tex-Mex Block Party hosted by Houston Barbecue and they handed out an incredible sausage called Chingadera Sausage and some carnitas tossed in Salsa Verde. This is a Husband and Wife Team with a big Dream, full-time jobs, and a popup usually every weekend. He tells us about how he started this BBQ adventure and the cool projects he has coming up which include an incredible collaboration this weekend with Khoi Barbecue, the Houston Barbecue Showdown and the Butchers Ball. In this Episode I sit with Daniel Weinstock of Maple Block Meat Co in Culver City California. I first Met Daniel at his beautiful restaurant for a Dinner he was hosting with Author and Chopped Champion Ed Randolph. They had an incredible feast for a lucky group of BBQ fanatics like myself, it was definitely a memorable night. Maple Block has been open for 4 yrs now and business is booming. I dropped in during Lunch Time and the flow of the lunch crowd was smooth and fast paced. Daniel discovered his love for the Culinary World at a very early age and he worked his way up to a job as a Sous Chef at an elite Restaurant in Beverly Hills. He went on to College learned the skills that later helped him start his own business! He's had a visit from Texas Monthly's Daniel Vaughn, he has a recipe in Ed Randolph's book, Smoked and many great articles from several other sources. He even has a dinner coming up with Phil Rosenthal on August 11th! They focus on the Craft and are always looking for ways to improve. While I was there I got a taste of a new Sausage they're trying out using Togarashi Spices, and it was to die for. I wanted to take a few links home with me! I hope you enjoy this inspiring story. Barbecue in California is Booming, I'm lucky to have moved here to witness this exciting era. The Underground scene is part of the DNA here, you can find all types of foods, fruits and deserts and even Drinks in underground settings. This has definitely contributed to the Barbecue explosion that we're seeing in SoCal. Over the next few weeks I'll be introducing you to some really cool popups that you might not have heard of yet but you will! Some of these folks are catering and cooking in their backyards and others are doing popups at breweries, Farmers markets and other cool establishments. For those folks that say there is no good Barbecue in California, you need to tune in and check some of these folks out!!!
In this episode I sit down with Grant Mason of Foundry Barbecue in Orange County. Grant is a Family Man that is born and raised in Huntington Beach. He got hooked on BBQ while he was in College in Utah then after moving back to California and missing his go to spot he decided to start cooking his own. Now a few years later he's taking his hobby to a new level. Earlier this year he spent time with BBQ Journeyman and Pitmaster at many top BBQ Joints including his own Goldees BBQ which will be opening in the fall of 2019, Mr. Dylan Taylor. This experience has given Grant the confidence to continue his trek towards opening a joint of his own. Oh and by the way, he's cooking on a Sweet Fatstack Smoker! With two young Children, his wife Kara pitches in when she can but she's known for putting out some incredible cookies at their popups but you must arrive early if you want some! In this Episode I take you with me to the LA food Bowl All-Star BBQ Event which happened Sunday May 12th. LA Food Bowl is a Food Festival that has hundreds of events all around LA with a mix of local and world famous chefs, it lasts 31 days and starts on May 1st. I wasn’t going to take my recorder because I didn’t want to bother any of the Pitmasters who were going to be busy serving... in the end I brought it along to interview some of the local fans & get their reactions. It turned out to be much more than I expected! Towards then end when everyone was wrapping up I was able to chat with the amazing Pat Martin who was so down to earth and friendly, Sam Jones who Is just the coolest kid on the Block & is the best story teller of all, Billy Durney the badass who was on my bucket list to meet someday that turned out to be the kindest gentle soul that has an aura about him, Matt Horn who is a young man overflowing with talent and part of our Cali family, Ed Randolph the author of the new Book entitled Smoked and my new homie, of course the always humble and positive Burt Backman who never has anything bad to say about anyone, my first Cali Familia Andrew & Michelle Muñoz who are killing it at Smorgasborg, and now back at breweries. I didn't know what to expect since my connection with Beverly Hills had only been through Hollywood, you know that Scene with Julia Roberts walking down Rodeo Drive, all the fancy stores, restaurants and Cool Cars. I was comforted to see that Phil was slinging some Damn good Barbecue. We chat about how he got started in and how he feeds some famous patrons, including a famous chef and restauranteur. He cooks everything from scratch and puts his heart and soul into everything he prepares. We met at a crowded restaurant so apologize in advance for the loud background. Robert Sierra founded the team in the early 2000’s and since then he’s become one of the most recognized faces in Barbecue. Bryan joined the team a few years later & they’ve been a team ever since. Robert has traveled the world with Legendary pit masters, he's also visited the most Obscure joints in small town America & everything in between. Although he has an extremely busy schedule which requires a great deal of travel with his photography, it's actually not his primary employment! I met this Family Man & Father of 3 at his house in Bee Cave Texas Outside of Austin where we sat in his back yard with a nice bottle of Whiskey and Cigars. I’m sitting with Robert Jacob Lerna who just inked a deal with some big Austin investors to open his very own BBQ joint! The concept of the joint is like no other. It will simply be named RJL Barbecue and will be located in Bee Cave Texas outside of Austin. The Saturday only joint will feature alternating pit masters from across the country. You can expect names like Sam Jones, Bryan Furman, Aaron Franklin, Rodney Scott, Andrew Munoz, Matt Horn, Leonard Botello IV, walter jetton among others. Ep8 - Smokefest 2
In this episode I walk you through Smokefest 2, an event organized by Dustin Bartz of Bartz BBQ. Smokefest2 was held at LA Aleworks in Hawthorne and it featured 4 of the top Popups in SoCal including Meathead BBQ, The Barbacoa Boyz, Kelly’s BBQ & of course Bartz BBQ. The menus were insanely packed with signature dishes and sides which included Wagyu & Prime Briskets, made from scratch sausages & delicious sides, beef ribs, pork ribs & there was even a donut truck for your sweet tooth! I interviewed the pit masters the fans the critics, the bloggers and even a Texas BBQ JOINT named The 512 Experience that will be opening soon in Las Vegas. It had been a rainy couple of weeks and it definitely sprinkled throughout the day but the BBQ Fanatics still came out in full force. I hope you enjoy the show, this is Smokefest2!

In this Episode, I sit down with Drew Brahs and Bryant Stephens of Harper Barbecue. These guys are based in Orange County and they're quietly putting out some of the baddest BBQ Pit's around. They make backyard models, large covered commercial trailers and pretty much anything your imagination can come up with. I didn't realize there were country folk in California until I sat down with these fellas who are all about hunting and fishing & their office had all the equipment to prove it! It was a chilly morning and I was shivering until we hit an open bottle of Makers mark that warmed us right up. With the Country Music playing in the background they proceeded to tell me how they started their operation and how they have big plans to open a down right Central Texas BBQ joint in Costa Mesa. Ep6 Heritage Barbecue
In this Episode I sit down with Danny and Brenda Castillo of Heritage Barbecue in Orange County. They are probably the most underrated BBQ Joint in California. Although they bring the long lines and sell out every time they cook, they're not as recognized as some of the other big names. This doesn't hold them back from putting out some of the Best Barbecue in the State! Danny is an artist at heart and he immerses himself in his work. He is passionate and is always looking for ways to improve and innovate. Brenda aides in the preparation and creativity of the dishes at times but her main role is to maintain the operational side of the house. She believes and supports her husband to no end and together they are doing some amazing things. This is only the beginning for them!! In this Episode I interview Andrew and Michelle Munoz of Moos Craft Barbecue in East LA. Moo's is one of the Premier Central Texas Style Barbecue Joints in the State of California. They began slinging Barbecue in early 2017 and in a short period of time they've been able to create a tremendous following growing their Instagram to over 20K followers and consistently selling out. They've been featured on Man Fire Food with Roger Mooking, Eater LA, most recently Food and Wine and many other articles. Their love of BBQ stemmed from trips to Texas, where they've been to research and gather valuable knowledge from some of the top Pitmasters in the state. We met over some Huge Burritos in a historic East LA Restaurant, El Tepeyac, located in Boyle Heights. E4 Bartz Barbecue
In this Episode I Interview Dustin Bartz of Bartz Barbecue. Bartz is a one man show based in the South Bay of Southern California. He was inspired to cook Texas Barbecue, when he moved to Austin for a short while in the early 2000's. He's a very passionate and talented individual that pushes himself to extremes, sometimes having up to 5 events in one week! He uses the highest quality meats and is one of the few that smokes all of his meats onsite. He makes his own sausages from scratch along with all of the tasty sides. I have to add, he makes one hell of a burger too!! He helped organize the 2nd Annual Smokefest which will be held at La Ale Works starting at Noon on March 2nd. In this Episode I interview someone you may not have heard of outside of California. He is truly one of the Pioneers of the Southern California Underground BBQ Scene. Fernando Carrillo, better known as Ragtop Fern, is Born and Raised in Historic Filipino-town in Los Angeles. For years, He's been serving up some Amazing Barbecue from his doorstep in his beloved neighborhood. Although he's been featured on a few articles, has had opportunities and offers to grow his business, he chooses to stay small and fly under the Radar. This Low-Rider enthusiast and longtime UPS driver is as humble as they come. In car terms, he's the equivalent of the Classic Car in the Garage that only gets taken out on Weekends or Special Occasions and he's not interested in making it a daily driver.
