Moroccan lamb backstrap Ingredients Cups Metric 2 x 250g/8oz lamb backstraps  1 tbsp extra virgin olive oil (rubbing) 1 1/2 tbsp extra virgin olive oil (cooking) MOROCCAN SPICE MIX (RAS EL HANOUT, NOTE 2): 1 1/2 tsp cooking/kosher salt 3/4 tsp cumin powder 3/4 tsp ground ginger 3/4 tsp black pepper 1/2 tsp allspice powder 1/4 tsp cinnamon powder 1/4 tsp coriander powder 1/8 tsp clove powder YOGURT SAUCE (FOR SERVING): 3/4 cup Greek yoghurt 1 tbsp lemon juice 1 tbsp olive oil , plus extra swish for drizzling 1/4 tsp each salt and pepper Pinch of sumac or paprika , optional garnish Instruction Yogurt sauce – Mix ingredients. Refrigerate until required. Moroccan spice mix – Mix the spices in a small bowl. Coat backstrap – Pat the backstraps dry with a paper towel then rub all over with 1 tbsp olive oil. Sprinkle the spice mix on the lamb backstraps – use it all! Set aside for 1 hour to marinate (if time permits, can skip). Cook – Heat 1 1/2 tablespoons olive oil in a large skillet over medium high heat. Cook the lamb backstops for 4 minutes on each side, or until the core temperature is 59°C/138°F. Rest – Transfer onto a rack set over a tray (or just a plate) to rest for 3 minutes. Cut into 0.75 – 1 cm / 1/4 – 1/3" thick slices. Serve with yogurt sauce! Recipe Notes: 1. Lamb backstrap – Also known as eye of loin or lamb loin. Lean cut of meat, so need to cook gently and keep the inside pink else it will be dry. Remove silver skin, if it has it, using a small sharp knife. Smaller is more tender (younger lamb) with more delicate flavour. Larger (say 300g/10oz+) is from older lambs (technically mutton), still very tender and excellent, also more economical. 2. Spices – You won’t be left lacking if you are missing a spice (maybe even two). Make up for it by dialling up the ones you have. 3. Leftovers will keep for 3 days in the fridge. 4. Damo's Dish - Perfecting Crispy Pork Crackling

Grown, harvested and first cold pressed in Northern Victoria.  Damo's Pork Belly Roast with Crackling Pre heat your oven to 250degrees C. Damo suggests using pork belly. Dry the skin thoroughly with a paper towel and then score it with a very sharp knife or Stanley knife. Or ask you butcher to score it for you. Don’t cut all the way through to the meat. Dry again with paper towel and try and get it as dry as possible. Boil the kettle and pour over the skin (not the meat) to get it to start blistering. Then dry the skin again really well (in the scored cracks as well). Get you Cobram Estate Olive oil (Damo likes robust for this dish) and liberally apply all over the skin. Massage the oil into the skin and the score mark and then apply a good sprinkling of course sea salt over the entire thing. Place into the very hot oven for 10-15minutes. Check it regularly so it doesn’t burn. Once you see a bit of char bring the oven down to 180degrees C. If some of the crackling is getting too cooked just place a bit of foil over that patch to stop it burning. Take foil off towards the end and let it crisp up and dry before removing from the oven. Let the pork belly rest for a few minutes once you’ve removed from the oven – but don’t cover it. Damo's Dish - Slow Cooked Beef Short Ribs

Visit their website HERE at www.cobramestate.com.au BEEF SHORT RIBS Ask your butcher for beef short ribs but if possible keep them long on the big rack. Long and slow is Damo's preference. He cooks at 120 degree C for 6-8 hours (or even longer). Damo loves using his BBQ, but you can also slow cook in your standard oven in a covered baking dish or oven bag. Make your own rub or buy a pre packaged rub. Damo likes the Webber rubs. Home Made Rub Can be as simple as Garlic powder, paprika, onion powder and course sea salt.   Method Massage the rub into the beef short ribs (use gloves or you’ll get stained hands). Can apply the rub ahead of the cook and let it sit for up to 24 hours in the fridge before cooking. Put it on a rack in a roasting dish and cover and cook for as longs as you can. Broccolini side dish. Spilt your broccolini and sprinkle over parmesan, fresh chilli, salt, then slather with Cobram Estate Olive Oil. Roast at 220 degrees C for 10 minutes or so. You’re aiming for a nice char on the broccolini. Serve with twice cooked potatoes. Par boil spuds then cover in Cobram Estate olive oil. Roast for around 2 hours in an oven bag.
