North Carolina is home to around 9 million pigs. Many of those pigs live in big factory farms, and all of those pigs produce a lot of waste. On these factory farms, that waste is collected in big outdoor lagoons, and then sprayed out across fields as fertilizer. Ah, 2019. It was the year of the celery juice phenomenon, thirsty brands on Twitter, Game of Thrones food anachronisms, high profile restaurant divorces, and Impossible doing the, well... impossible. Inside the Christmas Bar Phenomenon
It feels like Christmas bars are taking over. These unabashedly kitschy, tinsel-and-ribbon adorned yuletide popups are slinging good cheer and plenty of booze all over the country, and we wanted to know why people love them so much. So we called up Beth McKibben of Eater Atlanta, where at least 12 different Christmas bars are attracting massive crowds, and Greg Boehm the founder of Miracle, the popup making it all happen.

Hospital Food Gets a Refresh
Hospital food has long been the worst of the captive audience cuisines, outpacing even airplane food in its terribleness. But it wasn't always this way. Preparing nourishing food for the sick was once a domestic art and an essential part of caring for the ill. We’ve fallen a long way, but now one hospital is making good food part of the treatment plan.

Alison Roman Is Calling BS on Dinner Party Traditions
Very rarely are dinner parties about the food on the table. Throughout the history of evening mealtime gatherings, hosting was never so much about feeding friends and family as it was about flaunting wealth. From the dinner tables of ancient Greece and Rome to Victorian England and suburban America, an underlying sense of class anxiety has motivated us to call our social circles to the table in an attempt not to display our skills in the kitchen, but rather our banquet halls, china patterns and dedicated dining rooms.
Alison Roman is calling bullshit on all that. She’s been compared to Julia Child and Martha Stewart for her knack for empowering even the least experienced cooks to find joy in the kitchen, but this self-described “older millennial” cringes at the word “entertaining” where the domestic goddesses of yore leaned into it. How Impossible Foods Is Being Attacked by Big Beef
Pat Brown is on a mission to save the planet by cutting one thing from our lives: cheeseburgers. The Impossible Foods CEO is determined to cut the consumption of cows to save our planet from the devastating effects of big agriculture, but there's one thing standing in his way: Richard Berman, a powerful Washington lobbyist.
He's a formidable opponent protected by a shadowy non-profit called the Center for Consumer Freedom, but Impossible isn't scared. In fact, they think Berman's involvement means the beef lobby is terrified for the future of their industry, and scrambling to save their buns. How Simon Kim Built New York’s Most Successful New Steakhouse

With fall looming large around the corner, it’s time to bid farewell to summer and all the wonderful things that includes. But take heart in knowing that not all hope is lost. There’s plenty of good stuff on the horizon this fall, which, we’d argue, is the most exciting season for new restaurants, cookbooks and food-focused TV.

Why Spiked Seltzer Is Having a Moment
Just like there’s a song of the summer, inevitably, each year, a drink of the summer rises to the forefront of our collective consciousness to dominate warm weather gatherings between May and August. This year, it was all about White Claw, a low-calorie, low-carb spiked seltzer that’s been embraced by every kind of drinker out there.
We hit the beach to learn more about the drink that’s sweeping backyard parties across the nation, and also called in cocktail expert John deBary (formerly of P.D.T. and Momofuko) for a taste test to find out which brand we should be reaching for at the grocery store. But in the end, we learned more about what our hard seltzer obsession says about our relationship to alcohol than which flavors outperform the others.
Plus, we dive into the wildest food stories of the week, from the latest in the fast food chicken bonanza, to a terrible dieting app for kids as young as eight, and more. On its surface, restaurant criticism sounds like a pretty great gig. But dining out on the company dime, trying all the best new restaurants and getting paid to eat dinner out isn’t all that glamorous when you peak behind the curtain.
